Cooking burn out is so real. I took a week off away from it all and it’s a game changer. A reminder to be kind to yourself mentally and physically. Take a break when you need to! Cooking and eating should be fun. After a week away I’m so glad to be back cooking in my tiny kitchen. Two weeks ago I was ready to burn the place to the ground 😂 this ones delish and really versatile.
SKILLET HONEY MUSTARD CHICKEN: such a good sauce and really beyond simple. Take your chicken breasts and pat them dry. Season each side with salt, pepper, and paprika. Add 1 TBS oil to an oven safe pan or cast iron skillet. Let it get hot on medium high heat. Brown chicken breasts, 2 minutes each side. Now we make the sauce. In a bowl combine: 1/4 cup honey, 1 TBS yellow mustard, 1 TBS whole grain mustard, 1/2 TSP white vinegar, 1/2 TBS olive oil, and more paprika, ~1/4 TSP. Whisk together. Take pan off heat, add chicken back in, and pour honey mustard sauce directly over. I added 1/4 cup chicken broth to the bottom of the skillet as well. Cover with foil and bake at 375 for ~20 minutes and uncovered for another 10-15 minutes (depending on thickness of chicken). Serve it up! We hate this word but it really is so moist and great. I had it with rice and veggies but would be so good on a salad I think.
