Happy Sunday! Bringing some Italian comfort food that you can absolutely enjoy on a summer night.
NATALIE’S CHICKEN PICCATA: surprise, surprise I don’t have a meat mallet! Instead I halved by hand, 3 large chicken breasts, length wise so they’re thinner. Then I took a piece of parchment paper, laid it over the top of my halves, and pounded them with an actual hammer. Salt and pepper both sides. Coat the seasoned chicken in almond flour both sides. Flip them a couple of times to make sure they’re super coated. No egg wash for this one! Trust me you’ll get it once it’s cooked 😉 Heat your pan over medium high heat with 1/4 cup olive oil coating the pan. Make sure your oil is hot before putting the chicken in! I did 3 minutes each side for the chicken and batched it so to not overcrowd the pan. Take your cooked chicken and put on a separate plate to the side. In the same pan, reduce the heat to low, and add 1 TBS butter whisking everything around to dredge up your browned bits. Then add in 1/2 cup chicken broth, 1 spoonful minced garlic, 1/2 TSP garlic powder, and slurry (1 TBS flour dissolved in 1 TBS water), continuously whisking while it simmers. Once it’s thickened into a gravy like substance put in the juice of two lemons, 2 TBS Parmesan, 2 TBS capers, and 1 can whole artichoke hearts (strained). Let that simmer for ~3 more minutes and add in cooked chicken just nestled on top. Let that warm altogether for a couple more minutes and serve. Love you guys! P.s.
