Not your average cake. This one is so good and even won over people who hate cake (looking at my boyfriend).
LEMON OLIVE OIL CAKE W/ MACERATED BERRIES: if you’re scared by the word macerate no worries it’s literally soaking berries in a liquid so they soften and sweeten 😂 hashtag science. First separate 5 egg yolks from their whites but save and place 4 egg whites into a separate bowl. In a big bowl add 1/2 cup sugar to your 5 egg yolks and whisk them until they’re pale yellow and a little thicker. If you have a hand or standing mixer I would suggest using it, quite the work out! Add to your yolks, 3/4 cup extra virgin olive oil (I used an unfiltered Spanish Extra Virgin Olive oil) and 2 TBS lemon juice. Whisk that in for a couple minutes so it’s combined. For this next step I used a food processor but again anything with high whipping capacity is a winner. Add in your 4 egg whites and 1/4 cup sugar and whip on low until it’s frothy and gets a little stiffer, forming light peaks. Fold your egg whites gently into your yellow mixture. We don’t want to knock the air out so just use a spatula and lightly incorporate. Add the zest of one lemon and mix in. I used a 9” round pan which I suggest but use whatever! Grease your pan and pour in mixture. Top with 1 TBS sugar. Bake at 350 for a half an hour or until a toothpick comes out clean from the middle. Let this cool completely and then top with sifted powdered sugar and your berries. For the berries – chop up berries of choice (I used strawberries and blueberries), put them into a Tupperware with half a lemon squeezed over and 1 TSP of sugar, mix around, and let macerate for 3 hours prior to serving. So yummy!
